Cauliflower Rice—Try it!

Since changing to the Paleo/Primal lifestyle, I have discovered several things I miss in my diet. I believe that potatoes are acceptable fare, but the calories and carbohydrates can be detrimental to my blood sugar levels and over-all weight. Sweet potatoes seem to be a more acceptable alternative, but sweet tasting mashed potatoes don’t always go well with the main meal. And rice…what can I say about that? My blood sugar levels just spike and spike when I eat it, not to mention it’s a cultivated grain.


Then I learned about cauliflower rice. It seemed like such a great substitute, I tried it right away. It was amazing how close it could be to the real thing and, along with cauliflower “mashed potatoes”, has helped me omit rice from my diet. And it tastes great! You can season and flavor this “rice” to meet just about any application.

    *Microwave cooking is NOT recommended as the “rice” retains too much moisture.


    Thaw frozen “rice” a bit before cooking.


    NOT a substitute for regular rice in any dish where you use the rice to absorb liquid..


    I keep mentioning potatoes and mashed potatoes. Even if you have no cauliflower handy, your frozen supply of cauliflower rice can come to your rescue. Thaw a bag, cook it, and hit it with an immersion blender for tasty “mashed potatoes” instead of “rice”.
