It’s Been THAT Long!?

I Just logged on after reading an email and could NOT believe the date of my last post! Where did time go? Reality has set in ad I’m so disappointed in myself…letting work, health, finances and a myriad of other life problems and obstacles keep from this endeavor for so long.


I have been hearing so much lately about a couple of lifestyle changes—the Paleo and Primal lifestyles. I’m wondering if there are any “practitioner’s” out there who would be willing to share their experiences and comments about this “movement”.


The idea of returning to a diet based on what our distant ancestors survived on in order to maintain a healthier existence is intriguing. At this stage in my life, it has become more and more apparent that I need to make some changes.


I would like to know if the real-life application of this lifestyle is more expensive than a normal lifestyle. Does it, in fact, result in a healthier life? Is this dependent on some type of hard-core physical training/exercise program? Is it something that can be accomplished no matter where one lives?


Now that I have my priorities rearranged, I hope to be more diligent in my posting habits. I the meantime, ENJOY LIFE.

Comcast Trying to Take Over Time Warner Cable

Here’s a communication I received about Net Neutrality and wanted to pass it on to all interested internet users.


Dear Wilfred,


Comcast is trying to take over Time Warner Cable, a gigantic mega-merger that will put one of the most hated corporations in America in control of 75% of the Internet market.1


If you think your Internet is too expensive and has lousy customer service now, you ain’t seen nothing yet.


A company this large will have enormous political power to undermine Net Neutrality and control what content you can access online. But regulators have the power to block it—if there’s enough of a public outcry.


That’s where we come in. We’re doing everything we can to stop this merger dead in its tracks. Will you chip in $5?


Yes, I’ll chip in $5 to stop the Comcast-Time Warner takeover.


Comcast has been repeatedly voted one of the worst corporations in America.2


In consumer surveys, Internet providers get the lowest ratings of any industry—worse than airlines, fast-food chains, and insurance companies.3And Comcast is rated the worst of the worst.


If Comcast is allowed to take over Time Warner Cable, tens of millions of people all over the country will have no choice whatsoever in their Internet or cable provider.


Can you say monopoly?


We showed in the fight for Net Neutrality that we can use the organizing power of the Internet to beat Comcast. Now we need to do it again.

Seafood Recipes Everyone Must Try

 


The culinary industry is full of choices; there are thousands and thousands of great recipes out there to try out. We will focus on the seafood choices. There are many excellent options that will satisfy your appetite for great seafood without breaking the budget or spending hours in the kitchen.


The following recipes are great to try at home for yourself or a great fancy dinner.


1. Maple Salmon


This salmon recipe is very easy to make, maple is great on everything, even if you do not like salmon, give this a try and it will become your favorite sea dish.


Ingredients


1 pound Brussels sprouts, trimmed and halved


1 large red onion, cut into 1-inch wedges, stem ends left intact


2 tablespoons olive oil


kosher salt and black pepper


2 tablespoons pure maple syrup


2 tablespoons whole-grain mustard


1 1/2 pounds skinless salmon fillet, cut into 4 pieces lemon wedges, for serving


Process


Heat up the oven to 450° F, set the racks as high as possible, leaving space to insert a tray. Take a baking sheet, throw the Brussels sprouts and the onions and mix with oil. Season with 1/2 teaspoon of salt and 1/4 of pepper. Place the tray on the bottom rack, mix once, 15 to 20 minutes.


Take a small bowl, stir the maple syrup, mustard, and 1/4 teaspoon of salt and pepper. Let the vegetables cook for 12 minutes, and put the salmon on the upper rack, spread the maple on the salmon. Cook on the upper rack for 6 to 8 minutes.


Place the salmon with lemon wedges and the vegetables, serve and enjoy.


2. Angel Hair Pasta With Scallops


This next recipe is great for any day of the week, and it is a light meal so you can add it to your weight loss diet.


Ingredients


1⁄4 cup extra virgin olive oil


5 garlic cloves, minced


1 lb bay scallop drained well


2 (14 1/2 ounces) cans of diced tomatoes with balsamic vinegar basil and oil, slightly drained


2 cups fresh basil leaves cut into thin strips


8 ounces angel hair pasta, cooked al dente


salt, pepper and Italian spices to taste


Process


Heat up a medium heavy skillet over medium fire, add oil and let it heat for 1 minute. Bring garlic and mix for 2 minutes, add the scallops and season with salt and pepper to taste, cook for 3 minutes until the surface looks opaque.


Add the tomatoes and the basil and heat for an extra 3 minutes while regularly stirring. Take off heat and season to your liking, add the pasta to the pan, stir and serve.


3. Blackened Fish


While this is quite a spicy, it can be made with less cayenne pepper. A seafood delight that does not require lots of cooking time.


Ingredients


4 red snapper fillets or 4 other firm fish (about 1 1/2 pounds raw fish)


1 teaspoon salt


1 tablespoon garlic powder


2 teaspoons dried thyme


1 tablespoon dried parsley flakes


1 tablespoon dried basil


1 -2 teaspoon cayenne pepper (depending on how hot you want it)


1⁄4 teaspoon fresh ground black pepper


1 tablespoon olive oil


Process


Mix all the spices and all of the dry ingredients in a bowl and mix. Take the spice mix and spread it on a plate, now place the fillets on top of the plate and put pressure on it so that it soaks in the spices from both sides.


Heat up the olive oil in a skillet and cook the fish for 2 1/2 minutes for each side of the fillet, let cook depending on the thickness of the fillet.


Conclusion


Seafood is not always only available in fancy restaurants; you can try any of these recipes at home for some great seafood experience without leaving your house.

Seafood Recipes Everyone Must Try

Wolf Den Primal Chili

While cruising the web, I ran across a recipe for chili that used Italian sausage (Johnsonville recipes for those who want to see the start of this dish). It sounded so good I could imagine all the flavors melding together. My problem? Processed meat. So I decided to try the recipe by adding the ingredients for a home-made sausage and adjust the rest of the recipe to fall more in line with Primal guidelines.


By using a home-made sausage, I can control the salt, sugars and other questionable ingredients found in store-bought, prepackaged sausage. I didn’t actually make the sausage separately. I took the ingredients and added them to the chili recipe when I cooked it. I also left out the beans, so this is more Primal and typical of a Texas chili.

Question: Where’s FCC Chairman Tom Wheeler?


Answer: Who knows?


Here’s what we do know: Thousands of people like you have urged him to host public hearings in your communities on Net Neutrality and the proposed Comcast-Time Warner Cable merger.


And Demand Progress and our coalition partners have sent formal invitations, issued requests via the press and at rallies, and teamed up with other public interest organizations to push Wheeler to meet with you.

Homemade Mayonnaise


I like to divide this recipe in half so there’s not as much to use before it goes bad. It’s more difficult to make it in a blender, but I’ve found the immersion blender method  that follows works perfectly.

    Loose your patience? Added the oil too fast? Don’t throw out that broken mess! Whisk together another egg yolk, and a little vinegar or lemon juice. Pour your broken mayo in slowly, and keep whisking away. That should bring it back together.

    Immersion Blender Method:


    Place ALL the ingredients, adding the oil last, in a tall, narrow container. Put an immersion blender all the way into the container and quickly pulse a couple of times to blend the egg and vinegar. Leave the blender on the bottom and let it run. The mayonnaise begins to form in swirls. When a good emulsion has started, SLOWLY raise the blender up through the oil and then continue to mix until all the oil is incorporated.


    Can keep it for about a week or so in the fridge. Raw egg is not recommended for infants, the elderly, pregnant women, and people with weakened immune systems. To avoid the risk of salmonella infection, you can use pasteurized egg yolk instead.

Chia seeds are also one of the best plant sources of omega-3 fats and can contribute to your daily fiber needs in a big way. Their ability to absorb liquid is what thickens the drink, but don’t use more than the recommended amount—your drink will turn into a gel!

Net Neutrality Campaign Update

Just recently members of the internet community conducted a Net Neutrality campaign to help keep our freedoms on the net. As you may know from my earlier post, the campaign was a huge success.Can you believe the “FCC has received over 3.4 million comments on net neutrality”?


“The FCC’s proposal to create a fast and slow lane is of concern and must be strictly evaluated. The FCC is conducting a four-month public comment period to seek input from the public on its net neutrality proposals, including the fast lane. As of September 16, 2014, the FCC has received over 3.4 million comments on net neutrality.”


As you can see from the following email, the Feds have had to change their focus to carry out their designs. We need to keep up our pressure and vigilance to make sure these changes never become a reality. I have posted the email I received from Nita Lowey, a member of Congress, in response to this activity.


Dear Mr. Hatch:


Thank you for contacting me about your support of net neutrality. I appreciate having the benefit of your views, and I welcome the opportunity to respond.


As you may know, the U.S. Court of Appeals for the District of Columbia ruled that the Federal Communications Commission’s (FCC) net neutrality rules were beyond the FCC’s regulatory reach, and therefore struck down the FCC’s net neutrality order. In response, on May 15, 2014, the FCC released a new proposal on net neutrality with a legal authority based in Section 706 of the Telecommunications Act. In addition, the FCC released a second proposal that could create so-called fast and slow lanes on the Internet.


The FCC’s proposal to create a fast and slow lane is of concern and must be strictly evaluated. The FCC is conducting a four-month public comment period to seek input from the public on its net neutrality proposals, including the fast lane. As of September 16, 2014, the FCC has received over 3.4 million comments on net neutrality.


The record number of public comments reflects the importance of an open and free Internet. As the FCC evaluates the public comments and proceeds with rulemaking, I will continue to monitor the FCC to ensure that a final rule respects access to the Internet and the free flow of information.
